Jolly Good Sugar Free Scones!


So I’ve taken on a real challenge this month – ‘Sugar Free March’ – for Cancer Research UK.  For someone who loves all things sweet – especially cake ♥ ♥ ♥ this is tough!!  So I’m seven days in and it feels like the longest month ever so I decided to try baking something resembling a sweet treat and oh my goodness these sugar free scones served with mascarpone and fresh strawberries feels like a proper dessert!  They were very quick and easy to make too. 225g self-raising flour

50g unsalted butter (fridge cold)

100g sultanas

100ml full fat milk (plus a little extra for brushing)

A squeeze of lemon juice (apparently this reacts with the self-raising flour and helps them to rise)


Preheat the oven to 200ºc fan

Rub the butter into the flour until it resembles breadcrumbs

Stir in the sultanas

Add the lemon juice to the milk, then add this to the dry ingredients

This should form a soft dough but add a little more milk if it’s too dry

Pat the dough (don’t roll it) on a floured surface until it’s about an inch thick

Cut out the scones with a cutter (don’t twist the cutter as this can affect the rise) or use a sharp knife to cut the dough into squares

Place on a greased baking tray and brush the top of the scones with a little milk

Bake for about 12 minutes or until golden and cooked through
